Pan Roasted Corn Pasta Salad + Taco Ground Beef & Avocado

✨ Favorite thing about this meal: The flavor! The corn pasta salad itself has so much flavor already, but when I added some taco seasoned ground beef and chunky avocado, it was even better. You could swap the protein for chicken breast or another ground meat like turkey; your choice.

TIP: You can buy cotija pre-grated at some grocery stores. This saved me a couple minutes of prep time!

Greek Chicken Green Salad ✨ Favorite thing about this meal: I've been on a pepperoncini kick lately, so I'd say this is my current favorite way to load up! I also like that I can make my own dressing (lemon olive oil dressing recipe included) OR shortcut the recipe with a Greek style/vinaigrette dressing from the store.
