15 lunch ideas made for working from home


Hey friend!

This one is for my fellow work from home crowd!

If you work from home, you already know the lunch situation is completely different from packing something for the office.

WFH lunches get to play by different rules:

  • You can use your toaster, oven, or whole stovetop if you want.
  • You can eat salmon (even warm it up!)
  • You can soft boil an egg.
  • You can throw together whatever's left in the fridge without worrying about transporting it.

That's the theme here! 15 easy lunch ideas that work best when made at home.

But first, tips for easier work from home lunches:

πŸ₯š Keep a couple things prepped ahead of time. Cooked chicken breast, hard-boiled eggs, or chopped veggies in the fridge mean lunch can come together without much real cooking. Even just one or two prepped ingredients makes a big difference mid-week.

🌿 Reinvent your dinner leftovers. Add something fresh like herbs and something crunchy like nuts or croutons, and yesterday's dinner becomes a totally different lunch. Have you ever heard of β€œputting an egg on it”?

πŸ“‹ Think in templates, rather that individual recipes. Snack plate. Soup and sando. Fridge clean out salad with your favorite dressing. Once you have a few templates you love, you can repeat with small variations all week without feeling too repetitive.

Pan Roasted Corn Pasta Salad + Taco Ground Beef & Avocado ✨ Favorite thing about this meal: The flavor! The corn pasta salad itself has so much flavor already, but when I added some taco seasoned ground beef and chunky avocado, it was even better. You could swap the protein for chicken breast or another ground meat like turkey; your choice. TIP: You can buy cotija pre-grated at some grocery stores. This saved me a couple minutes of prep time!
