3 vegetarian lunches worth meal prepping this week

Chickpeas do a lot of the heavy lifting here. They’re my favorite plant protein lately :) If you agree, I’m positive you’ll enjoy one or all of these lunches ⬇️

Mediterranean Inspired Grain Bowl Meal Prep

Loaded with roasted zucchini, bell peppers, and chickpeas, and served with a creamy lemon dill hummus dressing. It's the kind of bowl that looks like you put in a lot more effort than you actually did!


Roasted Chickpea Caesar Salad

Garlicky roasted chickpeas are the star of this Caesar salad. I’ve got two options for homemade Caesar dressing: a more classic option with anchovies; the other a vegan option with capers and red wine vinegar. Or go the quick route with a store bought option!


Herby Lemon Mashed Chickpea Salad

A whole can of chickpeas, bright lemon, fresh dill and parsley, mashed together into something that works great in a wrap, on toast, or straight from the container. Simple ingredients, big flavor. I love using my homegrown herbs for this one!
