3 vegetarian lunches worth meal prepping this week

Whether you're fully plant-based, doing a meatless week, or just looking to mix things up, these three vegetarian lunches are filling, flavorful, and genuinely easy to prep.

Chickpeas do a lot of the heavy lifting here. They’re my favorite plant protein lately :) If you agree, I’m positive you’ll enjoy one or all of these lunches ⬇️

​Mediterranean Inspired Grain Bowl Meal Prep​

Loaded with roasted zucchini, bell peppers, and chickpeas, and served with a creamy lemon dill hummus dressing. It's the kind of bowl that looks like you put in a lot more effort than you actually did!


​Roasted Chickpea Caesar Salad​

Garlicky roasted chickpeas are the star of this Caesar salad. I’ve got two options for homemade Caesar dressing: a more classic option with anchovies; the other a vegan option with capers and red wine vinegar. Or go the quick route with a store bought option!


​Herby Lemon Mashed Chickpea Salad​

A whole can of chickpeas, bright lemon, fresh dill and parsley, mashed together into something that works great in a wrap, on toast, or straight from the container. Simple ingredients, big flavor. I love using my homegrown herbs for this one!

Easy Chicken Salad With Grapes ✨ Favorite thing about this meal: I don't often get my food processor out, but I'll do it for this recipe. Way less chopping than most chicken salads, all in about 20 pulses. If it tastes a little flat, add more salt. None of these ingredients come pre-salted, so we can add more if needed. I grow flat leaf parsley and dill in my garden specifically so I can chop them up and add them into salads like this one. It's even better after chilling! Pan Roasted Corn Pasta Salad + Taco Ground Beef & Avocado ✨ Favorite thing about this meal: The flavor! The corn pasta salad itself has so much flavor already, but when I added some taco seasoned ground beef and chunky avocado, it was even better. You could swap the protein for chicken breast or another ground meat like turkey; your choice. TIP: You can buy cotija pre-grated at some grocery stores. This saved me a couple minutes of prep time!
